Lucas
& Stacey were both born and raised in New Jersey. They met when Stacey
started working as a waitress in Lucas' family-owned Jersey Diner in Hightstown,
New Jersey. After a number of years moving across the country and working
for other restaurants, they dreamed of opening their own place. With Lucas'
restaurant management experience and Johnson & Wales Culinary education,
and Stacey's marketing and graphic design expertise and experience they
felt they had the know-how to open their own place, when the time was
right. They moved to Colorado in 2001, got married and after the birth
of Mikey, their son, they believed the time was right to make another
dream come true - that was to open a classic neighborhood pizzeria. Luca's
Jersey Pizza & Pasta opened in 2004.
Luca
often states, that "consistency in food served, use of superior ingredients
and a friendly atmosphere in combination with good service is the key
to a great restaurant. There was a lot of experimentation in defining
my recipes. I insist we use fresh, quality ingredients. Our basic recipes
are distinctive and versatile. Our sauce and pasta are homemade, every
day. The pizza crust is made very thin, that keeps the pizza light and
does not cover up other flavors".
